NACHO Time to Throw Out Unused Food!

You know that moment when you open the fridge and come face to face with one tomato, half a green pepper, or any random assortment of leftover veggies and protein that you need to use up before they go bad? Instead of fretting over what delicious meal to prepare with such limited ingredients or throwing them out later and wasting food, bring it all together for a MOUTH-WATERING NACHO DISH!



Inspired by Queen's University's Lazy Scholar nachos, this customizable meal can feed anywhere from 2 to 4 people and takes less than half an hour to make! All you need is whatever you can find in your pantry and fridge, and tortilla chips, which should not cost more than $4. I happened to have some at home which worked out perfectly!



This meal can be whipped up for pretty much any occasion from a game day celebration to a family board game night.


Baking the nachos is completely optional! I found that it was a very efficient way of melting the cheese and giving the tortilla chips some added flavour, which I enjoyed. However, these layered nachos can also be eaten "raw" or microwaved if you are in a hurry.


The 6 minutes baking time is just a rough guideline as it's usually when the cheese melts. Feel free to leave the nachos in the oven for as little or as long as you'd like! This dish is very easily customizable to anyone's preferences!

RESULTS:

While not the neatest dish, these layered nachos were delicious and very filling. It was a great way to use up my leftover produce! Here are some of my tips:

  1. Curved tortilla chips are the most ideal ones to use

  2. Ensure the edge of the nacho pile is higher than the middle so the toppings don't spill out onto the sides, or use a deeper sheet pan

  3. Grate a block of cheese instead of using single slices for more coverage and better melting

  4. This tastes best with some sort of "sauce", whether it be salsa, sour cream, or guac

  5. Dive into it right out of the oven for maximum crunch!

I've been craving the Lazy nachos for a long time, and these were a close comparison! Was it worth making? 100%.


OVERALL VERDICT:

This is a quick, easy, and very affordable dish to make for family, friends, or even yourself! I'd for sure make these again and experiment with using different combinations of ingredients based on what I have in my pantry - one thing that I love about nachos is that it is SO EASILY CUSTOMIZABLE.
