MATCHA Made in Heaven: DIY Matcha Mochi Recipe

What says "I love treating myself very MOCHI" more than creating your own dessert? Today, Trial and Error wants you to treat yourself with some magnificent Matcha Mochi!


This time we weren't inspired by TikTok, rather we were inspired by a recipe from Japanese Cooking 101, a cooking channel that specializes in some of the most delicious and beautiful desserts you'll ever see. As per usual, rather than sticking to the recipe word for word, we decided to listen to some online suggestions to make a chewier mochi that MATCHAS our palate.

 

MODIFICATIONS:

  • CUT THE "SWEET TALK": Instead of a 2:1 sugar-mochi ratio, we decided to cut the sweetness to suit the filling and create a more chewy mochi texture

  • LOTS AND LOTS OF MATCHA: this is mainly for >100% matcha powders that contain creamers, sugar, and other fillings that take away from the matcha flavour or for those matcha maniacs that really want a more bitter taste

  • DON'T STEAM: for people that don't have access to steamers, another way to create the mochi dough is through microwaving the dough over several 1 minute rounds or by heating it up and stirring constantly on the stove top


In the end, we created a pretty Macgyver-esque recipe as shown in the video below.



 

RESULTS

This probably goes without saying, I am definitely not a dessert chef or even a capable cook to say the least. In the end, we were lucky that the mochi still tasted incredible and had a really good texture. The process was definitely a lot messier and more physically-taxing than I expected (but, that also could just be due to the fact that I am an incredibly inactive individual).


Looking back on the process, I am happy to say I experienced two life-changing lessons. First, baking is actually a lot of work. Bakers and chefs are definitely hiding massive gains if they deal with what I went through the daily basis. No matter how much you think the thick mochi will be hard to stir, multiply that by 10 (the THICCer the mochi gets, the more she'll make your arm pay). But trust me, the results will be worth it.


Second, prepare for a huge sticky mess. Mochi is a very sticky substance before it gets dusted with starchy powder. So, if you want to save your fingers from the stress, we recommend giving your hands a generous dressing of potato starch powder.


THE VERDICT

10/10 would try again! Desserts taste a lot sweeter when you make them yourself and its a really good way to customize your mochi craving to your specific taste. For those trying it out, remember to invest in some good filling and train your arms before hand. It'll be kinda tiring during the stirring process, but the texture you receive in the end will reward your efforts greatly.
